One pan lasagne

Ingredients

Base

2 tbls olive oil

1 medium onion diced

1 tbls Italian seasoning

500g beef mince

2 tbls tomato paste

1 750 ml bottle passata

4 dry lasagne sheets broken into 8 pieces

Topping

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 cup ricotta cheese

 

Method

  1. Heat a deep fry pan on medium, add oil, onion and Italian seasoning and sauté till onion is soft.
  2. add mince and brown.
  3. add tomato paste and passata, turn heat down to medium low.
  4. add broken lasagne sheet pieces and cook till soft.
  5. remove from heat, top with mozzarella, Parmesan and dollop with ricotta.
  6. place under grill till chees is melted and golden brown.

Serve with crisp salad.

One Pan Creamy Ham Gnocchi

INGREDIENTS

1   Onion, diced.

1 tbls  Olive oil

2 cups  Ham, cut into 2cm cubes

1 cup  Frozen green peas

1 cup  Hot water

1/2 cup  Heavy cream

Ground black pepper to taste

1 cup  mozzarella cheese, grated

1/2 cup  Parmesan cheese, grated

2 tbsp  finely chopped parsley

 

METHOD

Step 1. On low heat add oil and soften onion.

Step 2. On medium heat add ham and cook till golden brown add peas, hot water and cream. Season to taste.

Step 3. Cook on medium low until gnocchi is tender and sauce has thickened, remove from heat. Top with mozzarella, Parmesan and parsley. Place under grill till golden brown, serve with a mixed salad .
